What maqluba is

Maqluba is a layered, upside-down rice dish common across the Levant with family-specific variations. The name describes the reveal: you invert the pot so rice and vegetables tumble out in a mosaic.

A weeknight-friendly approach

Traditional large pots feed a crowd. For four people, use a deep oven-safe skillet:

  1. Brown eggplant slices lightly in olive oil; set aside.
  2. Sauté onion until soft; add protein if using.
  3. Parboil rice 5 minutes, drain.
  4. Layer eggplant, protein, rice; add spiced water to just cover.
  5. Simmer covered on low until rice is tender; rest 10 minutes before inverting.

Serving notes

Pair with yogurt salad and fresh herbs. Leftovers reheat gently with a splash of water to loosen the rice.
